Watergate salad
A southern delicacy for every celebration- incredibly easy and delightfully delicious Watergate Salad was originally developed by Kraft under the name Pineapple Pistachio Delight when they first introduced pistachio pudding in 1975. It's quick and easy to mix together in less than 5 minutes and you’re good to go! It's called Pistachio Dessert Salad and Watergate salad. Aunt Margie loved this treat and would pick it up as her "salad" at the K & W Cafeteria whenever we went through the buffet line together. I don't know why we didn't make it ourselves but I did bring her a small container from the family run deli from time to time as a special goodie. Ingredients
-
1 (3.4-ounce) package pistachio instant pudding
-
2 (8-ounce) cans crushed pineapple in juice, undrained or 20 oz can Dole crushed pineapple
-
1 (8-ounce) tub frozen whipped topping, thawed
-
1 cup miniature marshmallows
-
1/2 cup toasted pecans, chopped, 1/2 cup chopped walnuts or 1/2 cup pistachios
Instructions
-
In a medium bowl, stir together the full contents of the pineapple cans and the pudding mix until smooth.
-
Fold in whipped topping and marshmallows. Cover and refrigerate at least 1 hour.
-
Sprinkle nuts on top or add cool whip with a cherry, before serving.
